Borsch: the Slavic beetroot soup

Borsch is one of the famous soups in the countries of CIS region. The recipe varies from country to country, from family to family, but the traditional so called “red Borsch” always has the main ingredient – beets.
There are more than 125 nationalities living in Kazakhstan in peace and friendship and it’s a big pleasure to see the way we all communicate with each other: by sharing our cultures, languages and living experiences!

I believe that the food people share with one another has a huge value as a part of non-verbal communication and cultural exchange.
I hope one day I’ll have a chance to explore every country around the globe, culture of neighborhood countries, European and Asian countries, through any means: languages, traditions and food and become a World Nomad.


  • 1 kg beef meat
  • 3 beets
  • 1 potato
  • 1 carrot
  • 1 onion
  • 1/2 of medium-sized cabbage
  • 3 small pieces of garlic
  • Cooking oil
  • Salt/Pepper
  • Dill
  • Mayonnaise


  • 1. You need to put beef meat in the cold water and boil it at least for the 1,5 hours.
  • 2. Then you need to take away the meat from the pan and get it carved; then strain the broth.
  • 3. You need to slice beets, onion, carrot, potato and cabbage (in the way it’s shown on the picture).
  • 4. Add potato slices into the broth and boil it for about 12-15 minutes.
  • 5. Take a frypan, pour in some cooking oil and put beets. Add some salt. After frying it up for about 3~4 minutes, let it stew for 15 minutes.
  • 6. Then add onion, carrot and garlic slices into the pan with beets; after frying it up for about 3~5 minutes, let it stew for another 15 minutes.
  • 7. Then you need to put your main parts of borsch together: – add broth, boiled potato slices and beef meat to the frypan with stewed vegetables (beets, onion, carrot, garlic) and get it boiled.
  • 8. Add cabbage and boil it all together for about 8~10 minutes.
  • 9. Serve it with the dill and put tea spoon of the mayonnaise right before eating.
