Fufu is a staple food with deep roots in Ghana’s history and common in many countries of West Africa and the Caribbean. It is often made with cassava flour. Other flours, such as semolina, maize flour or mashed plantains may take the place of cassava flour. Fufu, served alongside soup, usually groundnut soup, is a national dish of Ghana.

Ingredients

  • cassava
  • plantain
  • meat
  • blended pepper
  • blended tomatoes
  • cooking powder
  • salt
  • tomato paste
  • sliced onions
  • water
  • dried fish
  • fresh fish

Method

  • steam the meat for about 5 minutes
  • pour the blended pepper
  • pour the blended tomato
  • add salt
  • add the fresh fish
  • pour in cooking powder
  • allow it to cook for 10mins
  • add 30ml of water
  • pour the sliced onions
  • add the dried fish
  • stir and cook for 20mins and all is set
  • peel of the cassava
  • cut into pieces and add water
  • do same to plantain
  • and cook together for barely 15mins
  • when ready pour the water away
  • pound or mill the plantain and cassava
  • serve the pounded ormilled cassava and plantain with the ready hot soup
