There is one town in my country known as Ohrid.
Beautiful city by the beautiful Ohrid Lake, famous by the Ohrid traut and the 365 churches, one for each day :).
There is a saying “You’ve never been in Ohrid if you never have eaten Makalo”. Very simple dish, or i can say dip, which the recipe was a very big secret. I was trying to find out the real recipe for a long time. Every one was telling me a different story, but no one the real one. And in my country this is a big deal. Everyone wants to know how, actually, you can make the Ohrid dip. And of course when I discovered the secret I was so happy and at the same time irritated because I realized that is the simplest recipe ever.
They serve in each restaurant most of the time like a condiment for fish soup. But, the best part is when you eat only the dip with freshly baked homemade bread.
Anyhow, i love this dip because each time I’m eating it I’m experiencing very strange feeling, almost like nirvana. I am getting goosebumps all over my body, even at my face. My blood pressure gose so low that i am getting toa faze “i dont care about anything, everything is in one line for me”. Later on I’m feeling sick (of course, after so much garlic) but I don’t care. It’s worth it!


  • 1 whole garlic
  • 10 ml wine vinegar
  • 100 ml butter or sunflower oil
  • salt


  • Clean the whole garlic.
  • Put in the blendet together with the vinegar
  • Blend until combined.
  • Add the salt (pinch) and slowly, drop by drop (mayonnaise method) add the melted butter or the oil.
  • The result has to look like mayonnaise.
